Recipe Introduction
Indian pudding has a taste and texture similar to pumpkin pie. The main ingredient is cornmeal or Indian meal.

4 1/4 cups, whole milk
1/2 cup, cornmeal
4 tablespoons, butter
3 tablespoons, molasses
2 tablespoons, granulated sugar
1 teaspoon, ground ginger
3/4 teaspoon, salt
Vanilla ice cream or whipped cream
Recipe
In large, heavy saucepan, blend milk and cornmeal. Cook over medium heat
until mixture starts to bubble, stirring occasionally. Stir and boil for 3
minutes. Reduce heat to low, and cook for additional 15 minutes, stirring
often. Remove from heat, and stir in butter, molasses, sugar, ginger, and
salt.
Butter an 8- to 9-inch casserole dish. Pour in cooked mixture. Bake in
preheated 275-degree oven for 2 1/2 to 3 hours. A dark crust will form in
the center, and the edge should be bubbling. Cool on rack for 30 to 60
minutes. Serve warm or at room temperature with a dollop of vanilla ice
cream or whipped cream.
Tip: This recipe can be made three days ahead of time and stored in the
refrigerator. Reheat covered casserole in a 275-degree oven for about 40
minutes or until bubbly.
