    Chicken and Cheddar Quesadillas from David


    4 large flour tortillas
    1 cup grated, low-fat cheddar cheese
    1 cup cooked, shredded chicken breast meat
    1/2 cup frozen corn kernels, thawed
    1/2 cup diced fresh tomatoes
    1/4 cup cilantro leaves
    1 lime, cut into wedges
    1/2 cup salsa
    1/2 cup non-fat sour cream

    Recipe




    Preheat the oven to 350ºF.

    Lay the tortillas out on a work surface. Sprinkle half of each
    tortilla with cheese. Top the cheese with chicken, corn kernels,
    tomatoes and cilantro leaves. Fold the tortillas in half and place them
    on a nonstick baking sheet.

    Bake the tortillas for 10 minutes, or until they are thoroughly
    warmed.

    Cut each tortilla in wedges and serve with lime, salsa and sour
    cream.

    Makes 4 servings
