Crisp Fried Cheese Turnovers (Quesadillas) from David
Tortillas
About 1/2 cup shredded jack cheese
Several tablespoons canned chopped green chilies, mild or hot
Salt
Oil for frying
Recipe
Use small flour or corn tortillas for this recipe. Put a teaspoon of shredded cheese just off center of tortillas and dot with a bit of green chile. Using your fingers as a pastry brush, moisten the rim of the circle with water; fold into a half moon and press edges together to seal; as you form them, put the quesadillas in a plastic bag or under saran to keep moist; heat a scant 1/2 inch oil in small skillet until a scrap of dough sizzles as soon as it is dropped in. Fry 4 to 5 quesadillas at a time until crisp and slightly browned; depending on the heat of the oil, this takes 2 to 4 minutes. it doesn't matter hot often you turn the quesadillas as long as they cook on both sides.
Drain on paper towels and salt lightly; serve with sour cream and green chili salsa on the side or the thick version of adaptable red chili sauce.
Makes 15 to 20 turnovers.
