Sirloin Quesadillas from David
1 pound sirloin cut 1" thick
1/2 cup red wine
1 tablespoon ground cumin
2 tablespoons chili powder
1 tablespoon olive oil
3 large poblano peppers
4 tablespoons vegetable oil
1 large white onion cut into strips
3-1/2 cups pepper jack cheese shredded
1 cup cilantro chopped
8 large flour tortillas
Recipe
Slice steak across grain into thin slices.
In large plastic bag combine wine, garlic, cumin, chili powder and olive oil.
Add meat to bag and seal to coat meat in marinade then marinate overnight.
Cut poblano peppers in half then remove seeds and veins and cut into strips.
Add 2 tablespoons oil to a sauté pan then add onion and pepper strips and sauté until tender.
Remove from pan and set aside.
Heat remaining oil in pan then drain beef and add to pan and sauté quickly to brown.
Add onions and peppers back to pan and stir fry 1 minute more then place a tortilla on a griddle.
Sprinkle with some of the melted cheese, beef mixture, cilantro and top with more cheese.
Cover with another tortilla then grill until cheese melts and tortilla is browned.
Repeat with remaining tortillas and beef until it is all gone then serve immediately.
