Z'Tejas Beef & Chorizo Albondigas with Prickly Pear Glaze
For the Meatballs:
1lb Ground Beef
1lb Chorizo Sausage
1 small red bell pepper, diced
1 small yellow onion, diced
1 rib Celery, diced
1 medium Jalapeño, minced
½ tsp. Cumin powder
½ tsp. Cayenne pepper
1 Tbsp. Worcestershire sauce
1 Tbsp. Tabasco sauce
1/3 Cup bread crumbs
1 egg
Prickly Pear Glaze:
2 Cup prickly Pear Syrup
2 Tbsp. Chipotle peppers
2 Tbsp. fresh or granulated garlic
1 tsp. Worcestershire Sauce
1 tsp. rice vinegar
1 tsp Tabasco
Recipe
Place all ingredients into a large bowl or kitchen mixer and mix well to incorporate. After mixing, roll into approx 30 1 ½ oz. meatballs. Bake in a 350 degree oven for 10-12 minutes and serve with Prickly Pear Glaze.
Prickly Pear Glaze:
Combine all ingredients in a saucepan and bring to a low boil. Reduce heat and cook til reduced slightly, pour over cooked meatballs or use as a dipping sauce.
