Shrimp & Grits
½ cup Tasso ham
2 cups Rock Shrimp
2 Red Bell Pepper, 1 Leek
2 oz White Wine
¼ cup Cream
Grits: 5 cups Water
¼ cup Cream or Milk
1 cup Grits
1 cup Cheddar Cheese
2 Tbsp. Butter
Salt and PepperRecipe
Bring water and cream up to a hard boil.
While whisking, pour grits into water.
Turn heat to medium low and cook for 10-15 minutes.
Add in cheese, butter, and season.
In a medium sauté pan, sauté tasso until fat is rendered.
Add in leeks and bell peppers. Cook until softened (4-5 minutes)
Add shrimp and continue to cook until shrimp just begin to turn pink.
Deglaze with wine and reduce by half.
Add cream and cook until sauce consistency is reached.
Season with salt and pepper.
