Lingonberry Pears with Hazelnut Creme
2 cups water
1 cup white wine
1 cup lingonberry preserves
½ cup sugar
2 Tbsp. swedish warmth spice
6 large whole pears
1½ cup heavy whipping cream
1½ cups milk chocolate chips
2 Tbsp. butter
2 Tbsp. hazelnut liquorRecipe
In a large sauce pan over medium heat, bring water, wine, lingonberry preserves, sugar and kimistyle swedish warmth spice to a soft boil. Continue to simmer for an additional 15 minutes. Add pealed pears. Cook until tender, approximately 20 minutes. Try to keep the entire pear submerged under mixture at all times.
Heat up whipping cream in a sauté pan over medium heat. Add chocolate chips and melt on low heat. Stir in butter and hazelnut liquor. Put chocolate mixture in the refrigerator for ca 30 minutes until it becomes slightly thick, and then put crème mixture into a pastry bag.
Remove the core from the cooled lingonberry pears using a channel knife. Pipe hazelnut crème into the pear. Pipe some chocolate on the plate. Place pear on chocolate. Drizzle some of the lingonberry juice over pear
