    Diabetic Beef and Pineapple Stir Fry


    1 10 oz. can pineapple, reserve juice
    1/2 pound beef sirloin steak, sliced thinly on an angle
    1/2 cup flour
    3 bell peppers, one red, one green, one yellow, sliced into 1 inch
    strips
    1 purple onion, sliced onion to 1 inch pieces
    1/8 cup tamari sauce, or soy sauce
    1/2 cup pineapple juice, reserved from can
    2 tablespoons fresh ginger, minced, or 2 tsp. dried ginger
    1 teaspoon arrowroot

    In a small bowl mix the tamari sauce, juice, ginger and sweetener.

    Stir in 1 tsp. arrow root. Dredge beef strips in flour and sauté in
    nonstick pan sprayed twice with cooking spray until browned and
    crispy. Sauté the pineapple exactly the same way but do not dredge in
    flour. Keep warm in the oven Set a side. Stir fry peppers and onions
    until tender crisp. Add sauce and stir to combine. If it becomes to
    thick add some reserved pineapple juice. Just before serving stir in
    beef and pineapple
