    Diabetic Braised Kale



    - 2 pounds fresh kale, washed well
    - 1 teaspoon virgin olive oil
    - 1 small onion, chopped
    - 1 garlic clove, minced
    - 1/4 teaspoon pepper
    - 3 tablespoons water
    - 2 teaspoons fresh lemon juice
    - 1 teaspoon imitation bacon bits



    Recipe



    Finely chop kale. In a large non-stick skillet, heat oil and sauté onion and garlic until softened.

    Add kale and remaining ingredients except lemon juice and bacon bits.

    Cook over medium heat 15 to 20 minutes or until tender, then stir in lemon juice and garnish with bacon bits.
