    Diabetic Gingered Snow Peas


    1 lb fresh snow peas(or a 12 oz pkg frozen snow peas, thawed)
    2 t vegetable oil
    1 clv garlic, crushed
    1 t grated ginger
    2 T dry sherry


    Recipe



    Clean snow peas, trimming if necessary. Heat oil in large skillet
    over medium heat. Stir in snow peas, garlic and ginger. Saute
    for 2 minutes, until peas are tender. Toss with sherry. Makes 4
    servings.

    Nutritional information: 70 calories, 2 g fat, 3 g protein,
    9 g carbohydrates, 5 mg sodium, 2 g fiber.
