    Diabetic Hot and Sour Soup


    4 c low fat low sodium chicken broth
    4 T white vinegar
    2 T lite soy sauce
    1 T crushed red pepper
    2 t sesame oil
    1 c sliced mushrooms
    1 c thinly sliced carrot
    2 t cornstarch or arrowroot
    4 t water

    Recipe






    In a stockpot, combine the broth, vinegar, soy sauce, crushed
    red pepper and sesame oil. Bring to a boil, then simmer for 10
    minutes. Add the mushrooms and carrots and simmer for 10 more
    minutes. combine the cornstarch or arrowroot with the water.
    Add to the soup and continue to cook for 5 minutes, until it
    thickens. Makes 6 - 1 cup servings.


    Nutritional information: 50 calories, 3 g fat, 3 g protein,
    6 g carbohydrates, no cholesterol, 288 mg sodium, 1 g fiber.
