    Diabetic Jamaican Jerk Chicken


    - 2 teaspoons ground allspice
    - 2 teaspoons dried thyme
    - 1/2 teaspoon ground cinnamon
    - 1/2 teaspoon garlic powder
    - 1/2 teaspoon ground red pepper
    - 1/2 teaspoon salt
    - 1 pound boneless, skinless chicken breast, cut into 12 strips
    - 2 teaspoons vegetable oil

    Recipe



    In a shallow dish, combine the allspice, thyme, cinnamon,
    garlic powder, ground red pepper, and salt; mix well.

    Toss the chicken strips in the mixture, turning to coat completely.

    In a medium skillet, heat the oil over medium-high heat. Cook
    the chicken strips in batches, if necessary, for 2 to 3 minutes
    per side, or until no pink remains. Serve immediately.

    Yield: 6 servings
