Diabetic Lemon Glazed Asparagus
2 t unsalted butter or margarine
1/4 c plus 2 T lemon juice
1 T Dijon mustard
1/4 t pepper
1/4 c chives, minced
1 lb asparagus, root ends trimmed
Recipe
Melt butter in a small non-reactive saucepan over low heat.
Stir in lemon juice, mustard, pepper and all but 1 teaspoon
of the chives. Cover and keep warm over lowest heat. Place
asparagus in a steamer basket over boiling water. Cover
saucepan and steam 4-5 minutes or until asparagus is bright
green and tender. Transfer asparagus to a serving platter.
Drizzle with lemon sauce and sprinkle with chives. Makes 4
servings.
