    Diabetic Romaine with Creamy Herb Dressing



    1 small head of romaine lettuce, washed, crisped, and chopped
    3 tablespoon (45 g) low-fat plain yogurt
    2 tablespoons (30 ml) white wine vinegar
    1 tablespoon (15 ml) olive oil
    1 teaspoon (5 ml) Dijon mustard
    1/2 teaspoon (2.5 ml) crushed dried oregano
    1/2 teaspoon (2.5 ml) crushed dried thyme
    1 tablespoon (5 ml) chopped fresh parsley

    Recipe




    Arrange equal portions of chopped romaine on each of 4 salad plates.

    In a small bowl, whisk together remaining ingredients. Drizzle the
    mixture over the romaine and serve.

    (makes 4 servings)
