    Diabetic Tomato and Mozzarella Salad


    - 2 cups balsamic vinegar
    - 2 large tomatoes
    - 8 ounces low-fat mozzarella
    - 1 small red onion, diced small
    - 2 tablespoons extra virgin olive oil
    - 10 leaves fresh basil, cut into thin strips
    - Fresh black pepper

    Recipe





    Place the balsamic vinegar in a small pot over medium-high heat.
    Allow the liquid to reduce by half, then set it aside to cool.

    Slice the tomatoes into medium-thick slices and arrange
    them on a plate. Slice the cheese in medium slices and
    the red onions overtop. Pour the oil, then the balsamic
    vinegar, overtop the dish. Garnish the plate with the
    basil and pepper and serve.
