    Diabetic Tuna Sandwiches


    8 slices low carb bread*
    1 can water-packed white tuna, drained (6 oz)
    1/3 c mayonnaise
    1 t lemon juice
    1/2 t chopped tarragon
    ground pepper
    4 leaves romaine lettuce
    3 hard boiled eggs, chopped
    2 lrg ripe tomatoes, about 1 lb total, sliced thin
    4 thin slices dill pickle**



    Recipe



    Combine the tuna, mayonnaise, lemon juice, tarragon, and pepper.
    Place the lettuce leaves on the bottom of the bread. Top with
    tuna salad. Layer the tuna with egg whites, tomato slices and
    pickles. Wrap tightly in plastic wrap and refrigerate until
    ready to serve. Makes 4 servings.


    *Village Hearth has some new kinds is low carb breads. Including
    a multi-grain, wheat and Italian loaf. These are VERY good and
    any one would make good sandwiches.


    **If you home can like me, you can use homemade sweet pickles
    made with Splenda.


    Nutritional information: 277 calories, 20 g fat, 18 g protein,
    6 g carbohydrates, 184 mg cholesterol, 403 mg sodium, 2 g fiber.
    (This is without the bread, the bread has about 7 gr carbs
