Diabetic Turkey Salad
2 cups chopped fresh spinach
5 ounces cooked turkey, cut into 1/2 inch strips
1 (10 1/2 ounce) can asparagus spears, drained and chopped
2 medium tomatoes, sliced
2 hard-cooked eggs, chopped
1 green onion, chopped
1/4 cup plus 2 tablespoons no-oil Italian dressing
1/4 cup prepared mustard
Recipe
Combine the first 6 ingredients in a large bowl. Cover and chill. Combine Italian dressing and mustard, stirring until blended. Pour over salad and toss gently to coat. Cover and chill.
