Diabetic Warm Crab Salad Melt
2 cups mayonnaise
1/2 cup finely chopped green and red peppers
6 drops Tabasco
2 teaspoons Worcestershire sauce
1 tblsp chopped parsley
1 tblsp Old Bay seasoning
Juice from 1/2 lemon
Mix all ingredients.
4 ounces lump crab
1 1/2 tblsp imperial sauce
Toss crab with imperial sauce.
To serve
2 ounces vegetable oil
3 slices green tomatoes
1 cup seasoned flour
2 slices Havarti-dill cheese.
Recipe
Heat the oil in a skillet medium high heat. Dredge the tomatoes in the seasoned flour, place in the hot oil and quick fry on both sides until crisp. Remove from oil letting excess grease drain.
Arrange on a dinner plate and top with crab imperial. Top all with Havarti-dill cheese. Place under broiler until crab is warm and cheese is melted. Garnish plate with chopped parsley, chives and lemon wedge.
