Chocolate Crinkles (Gluten Free)
1/2 cup vegetable oil
4 ounces dark chocolate
2 cups sugar
3 eggs, room temperature
2 teaspoons vanilla
1 1/2 cups rice flour (Rice flour mix)
1 tablespoon rice flour (Rice flour mix)
1/2 teaspoon xanthan gum
1/4 teaspoon salt
1 teaspoon baking powder
Recipe
Melt chocolate, then mix with oil and sugar.
Mix in eggs, one at a time. Stir in the vanilla.
Add rice flour mix, xanthan gum, salt and baking powder. Mix everything together, then place bowl in the fridge for a few hours.
Heat oven to 350°F Form dough into small balls. Place them on a greased cookie sheet (about 1.25" apart), and bake 10-12 minutes.
