Gluten Free Pasta and Pan Seared salmon Fillet
Brown rice pasta dry 4 oz dry weight
Olive oil 2 tbsp
Chopped garlic ½ tbsp
Diced onions fine 4 tbsp
Diced zucchini ½ inches ¼ cup
Diced squash ½ inches ¼ cup
Sliced mushrooms ½ cup
Diced green bell pepper ¼ inch ¼ cup
Diced red bell pepper ¼ inch ¼ cup
Diced tomatoes ¼ inch (caned ok) 1 cup
Tomatoes puree 4 tbsp
Red wine ¼ cup
Fresh basil sliced 4 tbsp
Cajun seasoning 1 tbsp
Salt to taste
Tai hot chili sauce to taste
Salmon fillet 2/4oz each
Green onion brush for decoration 2 each
Italian seasoning blends 1 pinchRecipe
Cook pasta based on cooking instructions on label. Chill and put aside.
In separate pan sauté garlic, diced onion lightly on med heat (Do not brown)
Add diced zucchini. Squash, bell peppers, mushrooms sauté for 5 more minutes
Now add red wine, tomato products and let simmer for 10 minutes.
Add pasta and stir in to sauce.
Adjust seasoning with fresh basil, Creole seasoning and salt
Brush the salmon fillet with olive oil and season with Creole seasoning then pan sear in separate pan at med heat till done. (6 to 10 minutes or 140” F internal temp)
Place pasta in bowl, place salmon on top and garnish with onion brush.
