Low Carb Chocolate Cheesecake
1 package Gelatin
1 cup Boiling water
16 ounces cream cheese -- softened
1 teaspoon vanilla
16 packages Equal� sweetener
1 ounce unsweetened baking chocolate squares -- melted
Dissolve the gelatin in the boiling water in a mixing bowl.Stir well.
Recipe
Cut the cheese into small pieces and place in the dissolved gelatin. Add
melted chocolate. Mix. Add the vanilla, sweetener; beat well with an
electric mixer (2+ minutes on med/hi speed).
Pour into the prepared muffin cups or a buttered pie pan.. Chill until firm,
about 2-3 hours.
