    Cream of Mushroom Soup (low carb)


    1 cup whipping cream
    1 tbsp cornstarch
    1/2 tsp freshly ground black pepper
    1/2 tsp cayenne
    1/4 tsp salt
    1/2 cup minced onion
    1 lb mushrooms -- half sliced, half chopped
    2 tbsps butter -- divided
    1/2 red bell pepper -- diced (optional)

    Recipe





    In small bowl or cup, mix 1/4 cup whipping cream with cornstarch until
    smooth. Over low heat, combine remaining cream, the cornstarch mixture,
    black pepper, salt, and onion. Stir constantly until mixture thickens,
    about 10 minutes.


    Meanwhile, saute' mushrooms and optional diced red bell pepper in one
    tablespoon of butter until softened; add to soup, and stir over medium low
    heat about 5 minutes or until thoroughly cooked. Just before serving stir
    in one tablespoon (or more to taste) butter. Yield: 4 half-cup servings
