    Low Carb Reuben Casserole



    1 pound sliced deli-style corned beef
    1 (16-ounce) jar sauerkraut
    4 to 6 ounces Swiss cheese
    4 tablespoons low carb Thousand Island Dressing (recipe follows)
    4 tablespoons sugar-free mayonnaise
    1 tablespoon dill or Splenda sweetened relish

    Thousand Island Dressing:
    5 tablespoons mayonnaise
    1 tablespoon sugar-free ketchup
    2 tablespoons sour cream
    1 teaspoon dill relish
    1/2 teaspoon Splenda

    In a large casserole dish (or in separate ramekins) sprayed with cooking spray, layer thin slices of corned beef. Drain 'sauerkraut of 1/2 its juice and lay atop corned beef.
    Top with the Swiss cheese layer and bake at 350 deg F for 15 minutes (10 minutes for ramekins) or until cheese is melts but not
    liquid. While dish is baking, in a separate bowl mix Thousand Island
    Dressing, mayonnaise, and relish.
    Remove casserole dish from oven, slice in 4 serving-size squares and top with dollops of dressing mixture.
    To make the Thousand Island Dressing: Combine mayonnaise, ketchup, sour cream, relish, and Splenda. Mix well, keep refrigerated.
