    Low Carb Pina Colada Pudding


    3 cups water
    1 cup Pineapple Sugar free Syrup (such as Torani)
    2 packets unflavored gelatin
    2 tablespoons lime juice
    8 oz. cream cheese
    1 teaspoon rum flavored extract
    1/2 cup unsweetened coconut
    green food color (optional)

    Recipe




    Allow the gelatin to soften in the syrup for five minutes. Add to water and lime juice and bring to a boil. Turn off heat. Cut up the cream cheese into smaller pieces and add to the hot mixture. Stir until melted. Add the coconut and extract and pour into a glass serving dish (or 8 individual serving dishes). Allow to cool and then refrigerate until set.
    Serve with whipped cream.

    Makes 8 Servings
