    Summer Squash Sauté Low Carb


    1 lb. of yellow summer squash( I used patty pan), cut into 1/2" cubes
    1 lb. of zucchini, cut into 1/2" cubes
    2 plum tomatoes
    1/4 cup fresh basil, thinly sliced
    3 scallions, thinly sliced
    2 Tbl. olive oil (or your preference)
    Salt and Pepper to taste

    Recipe




    In large sauté pan add olive oil and sauté both squashes at
    medium/high heat. Cook for about 5 minutes. Add rest of ingredients
    and cook for an additional minute or two. Remove from heat and serve
