No Cholesterol Apricot Bread
2 c. boiling water
2 c. chopped dried fruit
2 tbsp. canola oil
1 1/4 c. sugar
2 oz. egg substitute (instead of 1 egg)
1 tsp. vanilla
4 c. flour
2 tsp. baking powder
1 tsp. salt
1 tsp. soda
1 c. chopped walnuts (optional)
Recipe
Pour water over fruit, let stand.
Cream together oil, sugar, egg substitute and vanilla.
Sift together flour, baking powder, salt and soda.
Fold egg mixture into fruit with dry ingredients and nuts.
Mix minimum amount.
Bake in two 9 x 5 loaf pans sprayed with Mazola spray at 300 degrees for about 1 hour.
