    Low Cholesterol Cheesecake


    1 c. graham cracker crumbs

    1/4 c. ground pecans
    1 tbsp. sugar
    2 tbsp. melted butter

    FILLING:

    1 (24 oz.) container low fat cottage cheese
    1 c. sugar
    1/4 c. melted butter
    2 tbsp. all-purpose flour
    3 lg. egg whites, lightly beaten
    1/4 c. fresh orange juice
    1 tbsp. orange-flavored liqueur or extract
    1/2 tsp. vanilla
    1/4 tsp. grated orange peel


    TOPPING:

    4 strawberries
    2 kiwi fruit, peeled, halved and sliced
    1 orange, sectioned
    1/3 c. apricot preserves, melted and strained

    CRUST: Preheat oven to 350 F. Combine crumbs, pecans and sugar in small bowl. Work in butter until crumbs are moistened. Pat evenly over bottom of 9 inch springform pan. Bake 10 minutes. Cool on wire rack. Keep oven on.

    FILLING: Process cottage cheese and sugar in food processor (or blender) until completely smooth. Add butter and blend. Add remaining ingredients one at a time, processing after each. Pour filling over crust in pan. Bake 45 minutes, until center is just set. Cool completely on wire rack. Cover and refrigerate at least 4 hours or overnight.

    TOPPING: Remove side of pan. Arrange strawberries, kiwis and oranges decoratively on top of cheesecake. Brush fruit with melted preserves. Refrigerate at least 30 minutes before serving. Makes 12 servings.

    Nutrition information per serving: 265 calories, 9 gm. protein, 8 gm. fat, 39 gm. carbohydrate, 372 mg. sodium, 2 mg. cholesterol.
