Low Fat Double Spinach Bake
vegetable cooking spray
1 cup sliced mushrooms
1 green onion -- chopped
5 cups fresh spinach -- coarsely chopped
1 tablespoon water
15 ounces ricotta cheese, part skim milk
1/4 cup skim milk
1/4 cup egg substitute
1/2 teaspoon nutmeg
1/2 teaspoon black pepper
8 ounces spinach fettucine -- cooked and drained
1/4 cup shredded lowfat Swiss cheese
Recipe
Preheat oven to 350°F.
Spray medium skillet with nonstick cooking spray. Add mushrooms,
green onion, and garlic. Cook and stir over medium heat until
mushrooms are softened. Add spinach and water. Cover; cook until
spinach is wilted, about 5 minutes.
Combine ricotta cheese, milk, egg substitute, nutmeg, and pepper in a
large bowl. Gently stir in noodles and vegetables; toss to coat
evenly.
Coat shallow 1 1/2 quart casserole with cooking spray. Spread noodle
mixture into casserole. Sprinkle with Swiss cheese.
Bake 25-30 minutes or until knife inserted halfway into center comes
out clean.
