Low Fat Fettucine Alfredo
8 oz. uncooked fettucine
1 tbsp. margarine
2 tbsp. flour
1-1/2 cups (12 oz. can) light evaporated skim milk
1 clove garlic, minced
fresh parsley, chopped
1/4 tsp. white pepper
1/4 tsp. ground nutmeg
1/4 cup shredded part-skim mozzarella cheese
2 tbsp. grated parmesan cheese
Recipe
Prepare fettucine as directed on package. In a large, non-stick pot, melt margarine and slowly blend in flour over medium heat. Stir in evaporated milk, garlic and seasonings, stirring constantly until sauce is thick and bubbly. Stir in cheese until melted.
Add cooked pasta to the sauce and toss to coat. Sprinkle with parsley.
Approx. per serving: 4 grams of fat
Yields six one-cup servings.
