    Lemon Pie


    1 lite ready made graham cracker pie crust
    3/4 cup Sugar
    1/4 cup Cornstarch
    Dash salt
    1 cup Water
    1 cup Buttermilk
    1/2 cup Egg substitute
    2 tsp. grated Lemon rind
    1/2 cup Lemon juice
    2 1/2 cup fat free Whipped Topping

    Recipe





    Combine sugar and cornstarch in saucepan; gradually stir in water and buttermilk. Cook over medium heat, stirring constantly, until mixture comes to a boil. Cook 1 minute.

    Gradually stir one-fourth of hot mixture into egg substitute, mixing well. Add egg mixture back to hot mixture, stirring constantly. Cook over medium heat, stirring constantly, until mixture thickens, approx. 2 minutes (bubbles will be thick when popping up). Remove from heat and add lemon rind and lemon juice. Pour mixture into prepared pie crust. Chill thoroughly; approx. 2 hours. Spread non-fat whipped topping over filling.

    Garnish with lemon zest, lemon curls and fresh mint, if desired.

    Serves 8
