    Light & Flaky Pie Crust Low-Fat


    1 c + 2 T whole-wheat, pastry flour or unbleached flour
    pinch salt;
    1 egg white; chilled & lightly beaten
    1 t apple cider vinegar;
    ice water; as needed

    Recipe





    Combine the flour and salt. Add the egg white and apple cider
    vinegar and mix until they are evenly distributed with the flour.

    Slowly add the ice water stirring lightly with a fork until dough
    is moist enough to hold together. Form a small ball. Flatten to
    1/2-inch thickness. Roll out on a floured surface (or between 2
    sheets of waxed paper) until dough is 1 1/2 inches wider than an
    inverted 9-inch pie pan. Fit dough loosely into pan. Fold edge
    to form a standing rim, then flute. Makes 8 servings.
