Low – Fat Fruitful Muesli
2 cups oats, quick or old fashioned
2 cups apple juice or apricot nectar
1 1/2 cups sliced fresh fruit
8 ozs low-fat vanilla yogurt
2 Tbsp chopped nutsRecipe
Combine all ingredients except nuts; mix well. Cover; refrigerate 8 hours or overnight. Serve cold; sprinkle with nuts, if desired.
Refrigerate in an air tight container up to 4 days.
Fresh fruit: any combination of banana, peaches, nectarines or strawberries. Makes 4 servings.
