    Lowfat Sautéed Eggplant


    2 teaspoons olive oil
    1 large eggplant, cut into 1-inch cubes
    salt to taste
    freshly ground black pepper


    Recipe



    1. Heat the olive oil in a 10" skillet over medium-high heat.

    2. Add the eggplant cubes, salt and pepper and toss with the olive oil until the eggplant becomes fork tender, about 5-8 minutes. Remove from the skillet and serve.
