    Sugar Free Fruit Cake


    1/2 cup shortening
    1 tablespoon peanut butter
    2 eggs
    1 cup rolled oats
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 teaspoon ground cloves
    1 cup flour
    1 cup unsweetened applesauce
    2 tablespoons liquid sugar substitute
    1 banana -- mashed
    1/2 cup golden raisins
    1/2 cup chopped pecans

    Recipe



    Cream shortening and peanut butter in mixer bowl. Beat in eggs. Add oats, baking soda, salt, cinnamon and cloves and mix well. Add flour, applesauce, sweetener, banana, raisins and pecans and mix well. Pour into greased loaf pan. Bake at 300 degrees for 1 hour. Cover with foil to prevent drying. Bake for 30 minutes longer. Cool in pan for 10 minutes. Turn onto wire rack to cool. Wrap tightly and store in refrigerator.

    Yield: 12 servings
