7-Up Muffins
8 tbsp fat free I Can't Believe It's Not Butter
1 cup cake flour
1 cup Splenda
1 egg
1 cup plain non-fat yogurt
1 tsp lemon extract
1/4 cup 7-Up (not diet)
Recipe
Using a medium or large mixing bowl:
Blend butter and Splenda together until smooth.
Add cake flour and mix well.
Add Egg and mix well
Add Yogurt, Lemon Extract and 7-Up and mix until smooth.
Spoon a little less than 3 tbl. (2 tbl. and 2 tsp. per/baking cup) of mixture
into 12 baking cups.
Bake for approximately 40 - 45 minutes, or until cooked throughly.
Special Notes
Makes 12 muffins for 1 point each. The entire mixture is 13 points! This makes for a good snack, dessert, and breakfast.
