    Weight Watchers Basil Spinach Salad



    1 bunch spinach
    1/4 cup basil leaves, shredded
    2-3/4 Tbs. pine nuts, toasted
    1 bacon slice
    2-3/4 Tbs. oil
    1 Tbs. plus 1 tsp. white wine vinegar
    1 Tbs. plus 1 tsp. sour cream
    1/2 tsp. sugar
    1 clove garlic, crushed
    1/4 cup grated Parmesan or Romano cheese

    Recipe





    Combine first 3 ingredients in a bowl. Cook bacon in a small pan until crisp. Let cool. Combine next 5 ingredients in a jar with a tight-fitting lid. Mix well and drizzle over salad. Crumble bacon and add to salad with Parmesan or Romano cheese.

    Serves 4
