Weight Watchers Cheddar Potato Frittata
1 1/2 cups chopped round red potatoes
Vegetable cooking spray
1 cup chopped tomato
1/4 cup chopped green onions
1/2 teaspoon salt
1 1/2 cup egg substitute
1/2 cup (2 ounces) shredded reduce fat sharp Cheddar cheese

Cook potato in medium saucepan in boiling water to cover 10 to 12 minutes or until tender. Drain well.
Coat a large nonstick skillet with cooking spray; place over medium-heat until hot. Add potato, tomato, green onions, and salt. Pour egg substitute over vegetable mixture. Cover and cook over medium-low heat for 15 minutes or until egg is set. Sprinkle with shredded cheese; cover and cook 2 additional minutes or until cheese melts.
Remove from heat; cut into 6 wedges, and serve immediately.
Garnish with green onions, if desired.
