    Weight Watchers Chinese Chicken Salad


    2 cups romaine lettuce, torn into bite-sized pieces
    1/4 pound fresh spinach, washed, stems removed and torn into bite-sized pieces
    1 can mandarin oranges, drained
    3 tablespoons lite soy sauce
    1 tablespoon honey
    1/4 teaspoon ground ginger
    2 tablespoons oil
    1 pound white boneless chicken breasts cut into 1-inch pieces
    3 tablespoon scallions
    1 clove garlic, minced
    1/4 cup cashews

    Recipe



    Combine lettuce, spinach and oranges in bowl.
    Whisk together soy sauce, honey, ginger and 2 tablespoons water.
    Set aside.
    Heat oil in wok or in skillet.
    Stir fry chicken until done but still tender, about 5 minutes.
    Add scallions and garlic, cook another minute.
    Pour over chicken and sauce over greens and toss gently.
    Sprinkle with cashews.
