    Ginger Carrots


    1 pound carrots
    1 tablespoon reduced calorie margarine
    1 packet Equal
    1 teaspoon grated ginger


    Recipe




    Rinse, trim and peel carrots. Cut into 1/4 inch slices. Steam 15-20 minutes, or until barely tender. In a skillet over medium heat, melt margarine until it bubbles. Add drained carrots and toss. Sprinkle with sugar substitute and ginger. Toss again to coat carrots lightly. Continue to cook in skillet for another 1-2 minutes, or until carrots are lightly glazed.
    Makes 5 servings.
