Weight Watchers Twice Baked Potatoes
4 small baking potatoes
� cup skim milk
� cup plain nonfat yogurt
� cup (1 ounce) shredded low-fat American cheese
� teaspoon paprika
Recipe
Wash potatoes, and pat dry; prick each potato several times with a fork.
Arrange potatoes end to end and 1 inch apart in a circle on paper towels in a microwave.
Microwave on HIGH 12 minutes, turning and rearranging potatoes after 6 minutes.
Let potatoes stand 5 minutes.
Cut potatoes in half lengthwise.
Scoop out pulp, leaving shells intact. Set shells aside.
Mash pulp in a large bowl, using a fork or a potato masher.
Add milk and yogurt; beat at low speed of an electric mixer until smooth and well blended. Spoon potato mixture into shells, and place on a microwave-safe serving platter.
Top stuffed potatoes evenly with cheese, and sprinkle with paprika.
Microwave on HIGH 30 seconds or until cheese melts.
Serve immediately.
