Weight Watchers Pepper Steak
1 lb Sirloin steak
1 tbsp Paprika
1 tbsp Olive oil
2 cloves Garlic, minced
1 1/2 cups Beef broth
4 Green onions, chopped
2 Green peppers, cut in strips
1 tbsp Cornstarch
2 tbsp Soy sauce
3 Fresh tomatoes, cut in wedgesRecipe
Cut the steak into thin strips. Sprinkle with paprika. Heat olive oil in a large skillet over medium-high heat. Add beef strips and garlic, saute about 4 minutes, until meat is brown. Add broth, cover and simmer for 20 minutes. Add onions & green peppers. Cover and cook 5 minutes more. In a small bowl blend 1/4 cup water, soy sauce, & cornstarch. Stir into meat mixture. Cook and stir until clear and thickened, about 2 minutes.
Gently stir in tomatoes and continue cooking just until heated through.
Serve over hot rice.
Chef's secret: It is easier to slice raw steak into thin strips if you partially freeze it first for 30 minutes; until it is firm.
