    Weight Watchers Winter Turkey-Broccoli Salad


    2 cups diced cooked turkey breast (about 10 ounces)
    4 cups cooked broccoli florets
    1 medium red or yellow bell pepper, seeded and sliced
    1 large red delicious apple, cored and coarsely chopped
    4 tablespoons lemon juice
    1 tablespoon Dijon-style mustard
    2 packets NatraTaste
    1/4 teaspoon ground white pepper
    2 tablespoons minced shallots
    3 tablespoons olive oil
    2 tablespoons water

    Recipe





    In a large bowl, combine turkey, broccoli and bell pepper.
    Sprinkle the chopped apple with 2 tablespoons of the lemon juice; add to the turkey.

    In a small bowl, combine the remaining 2 tablespoons lemon juice,
    mustard,
    NatraTaste, pepper and shallots.
    Whisk in the olive oil and water.
    Pour dressing over turkey mixture and toss.
    Chill 1 to 2 hours before serving.
    Makes six 1-1/2 cup servings.

    Per Serving (1-1/2 cups): 160 calories, 15 g protein, 8 g
    carbohydrate, 9 g fat, 40 mg cholesterol, 55 mg sodium
