Holiday Firecrackers
1 (12 oz.) can Spam Lite luncheon meat
1 (8 oz.) pkg. Monterey Jack cheese
1 (16 oz.) pkg. frozen phyllo pastry, thawed
butter-flavored cooking spray
1 1/2 c. sliced pickled jalapeno pepper
fresh chives (optional)
Recipe
Cut Spam Lite into 6 slices, and cook in a nonstick skillet over medium
heat; drain well. Cut each slice into 6 strips. Cut cheese crosswise into 12 slices; cut each slice into 3 strips. Place 1 sheet of pastry on a flat surface (keep remaining pastry covered with a damp towel). Lightly coat pastry sheet with cooking spray. Repeat procedure with 2 more pastry sheets and cooking spray.
Cut pastry stack in half lengthwise; cut each portion into 3 pieces. Repeat procedure with remaining pastry sheets and cooking spray. Place 1 Spam Lite strip, 1 cheese strip and 3 jalapeno pepper slices on each pastry square. Starting with long end, roll pastry around Spam, cheese and pepper slices. Twist ends to seal; place on baking sheet. Freeze 1 hour. Bake at 400 degrees for 12 minutes. Tie ends with chives, if desired.
Makes 3 dozen.
