Cheesy Mushroom Pasta
1 tbsp olive oil
4 cloves garlic chopped
8 oz button mushrooms sliced
1/2 cup vegetable broth
1 lb penne pasta
2 tbsp mustard
2 cup whipping cream
1 package 8 oz cream cheese
1/2 cup walnuts
chopped
1 tbsp chives chopped
Recipe
Heat oil in large skillet with mushrooms and garlic saute for 4 minutes until tender
Add the vegetable broth and boil until mixture reduces by half (5 minutes)
Cook pasta according to package and drain
Add mustard and cream to mushroom mixture
Cook and stir over high heat until sauce thickens (2 minutes)
Reduce heat to low
Add the pasta & walnuts to cream cheese mixture
Stir gently to combine
Garnish with chives and serve hot
