Parmesan-Crusted Grouper (Dairy)
* 1/2 cup grated Parmesan cheese
* 1/3 cup butter, softened, not melted
* 2 tablespoons mayonnaise
* 2 scallions, thinly sliced
* 2 large or 4 small (1-inch-thick) grouper fillets
* 1 lemon
* freshly ground black pepperRecipe
Preheat broiler to high.
In a small bowl, combine the Parmesan, butter, mayonnaise, and scallions. Set aside.
Place the grouper fillets on a lightly greased broiler pan. Squeeze the juice from 1 lemon over the fillets and sprinkle with black pepper.
Broil 6 inches from heat for 10 minutes. Remove from oven. Spread the tops of the fillets with cheese mixture.
Return to oven and broil for 2 minutes longer or until the topping is lightly browned and bubbly. Remove fillets to platter.
