    This is a real old fashioned recipe in that 'you want more, you make
    more' so the measurement s are just approximate.

    List of Ingredients




    Borekas, Potato, Mushroom & Onion Filled



    Filling:
    3-4 medium potatoes, peeled and cubed
    1 medium onion, chopped
    10-12 medium mushrooms (any variety) chopped
    salt and pepper, to taste.

    Recipe






    Boil the potatoes and mash them. Saute the onion and mushrooms in a mixture of half oil and half chicken shmaltz (optional) until very soft.

    Mash into potatoes. Season to taste.

    Purchase a package of prepared puff pastry squares. Fill the pastry with the potatoes and fold over and pinch closed. Bake at 400 for 10-15 minutes, until puffed and golden.

    You can also make this recipe with a cheese filling, but omit the
    smaltz.
