    Chicken and Sausage Jambalaya


    5 ea Bay Leaves
    4 tsp Cayenne
    7 tsp Salt
    7 tsp White Pepper
    5 tsp Dried Thyme
    2 1/2 tsp Black Pepper
    1 tsp Sage
    1/2 # Butter
    2 1/2 # Sausage
    5 # Chicken
    5 cup Onions, chopped
    5 cup Celery, chopped
    5 cup Green Bell Pepper, Chopped
    5 Tbsp Garlic, Chopped
    3 qts Chicken Stock
    7 1/2 cup Uncooked Rice

    Recipe




    Melt butter in pan, add sausage and chicken, cook until brown.

    Add seasoning and half of onions, celery, bell peppers, and garlic.

    Cook for 10 minutes until vegetables are soft.

    Add remaining onions, celery, bell peppers, and garlic.

    Cook for 10 minutes.

    Add hot stock and uncooked rice and bring to a boil.

    Reduce heat to simmer and cook covered until all liquid
    is absorbed.
