Armadillo Eggs
- Large Jalapeno Peppers
- Cheddar Cheese
- Jack Cheese
- Breakfast Sausage Meat (Mild or Spicy, your choice)
- Crackers (Saltines, with or without salt)
Recipe
1. Cut tops off of peppers and clean out.
2. Cube cheese small enough to fit into peppers.
3. Stuff peppers with cheese
4. Slice off enough sausage to pat down and fit completely around the
pepper covering tops and bottoms as well.
5. Finely crush crackers and role peppers with sausage meat in the cracker
crumbs.
6. Place peppers on ungreased baking sheet (might want to use aluminum foil
on baking sheet).
7. Preheat oven to 350-375 degrees F.
8. Place in oven and cook for about 40 minutes for fresh pepper or 30 minutes for canned peppers.
9. Remove from oven and cool
