    Homemade Italian Dressing/Marinade


    2 tsp. cornstarch
    1/2 cup water, divided
    3/4 cup vinegar
    2 tsp. sugar
    1 tsp. kosher salt
    2 tsp. dried red pepper flakes, optional
    2 tsp. dried garlic flakes
    2 tsp. dried oregano
    2 tsp. dried parsley
    2 tsp. freeze-dried chives
    1 tsp. dried onion flakes (I substitute 1/2 tsp. onion powder)
    1/2 tsp. hot pepper flakes
    1/2 tsp. fresh ground black pepper
    1 cup canola oil

    Recipe



    Combine the cornstarch and 1 tablespoon of the water in a small bowl and stir to form a paste.

    Place remaining water, vinegar, sugar and salt in a non-reactive saucepan and bring to a boil over medium heat.
    Stir the cornstarch mixture again and whisk it into the boiling vinegar mixture.

    Bring to a boil whisking steadily; the mixture should thicken.

    Remove the pan from the heat and add all the remaining ingredients except the oil.

    When cool to room temperature, whisk in the oil.

    Transfer to a jar and refrigerate.

    Yield: 2-1/2 cups
