Marinated T-Bones with Twice Baked Potatoes
Marinade:
4 T-Bone Steaks
1/3 cup Olive Oil
2 Tbls. Parsley-chopped
2 Tbls. Balsamic Vinegar
1 tsp. Rosemary
1 tsp. Garlic
Salt and Pepper to taste
Twice Baked Potatoes:
4 Potatoes
2 cups Milk
¼ stick Butter
Salt and Pepper – to taste
¼ cup Sour Cream
3/4 cup Scallions – sliced, reserve 2 tablespoons for garnish
3/4 cup Bacon – chopped, reserve 2 tablespoons for garnish
1 cup Cheddar Cheese – shredded, reserve 2 tablespoons for garnish
Recipe
Steaks:
Mix all ingredients and add steaks, marinate for 1 hour then grill to desired doneness.
Potatoes
Bake the potatoes for 1 hour at 350 degrees. Let cool to room temperature.
Slice in half and hollow out the skin and reserve.
Heat the milk, butter, salt and pepper. Add to potatoes and mash until smooth.
Stir in the sour cream, bacon, scallions and cheese. Put mixture back into the skins.
Top with reserved garnishes and serve
